Brain Health Brownies with Clarissa Lenherr

See my Brain Health Brownie recipe below packed with walnuts, chia seeds, cacao and Lion’s Mane mushroom extract – all wonderful additions to a traditional brownie to support your brain health, whilst tasting delicious!

INGREDIENTS
200g of gluten free flour
150g ground almonds
4 tbsp cacao powder
150g coconut sugar
1 tsp baking powder
1 tsp bicarbonate of soda
4 tbsp chia seeds
100g extra virgin olive oil
180ml unsweetened almond milk
90g dark chocolate pieces
50g of broken walnuts
1.5 tbsp lion’s mane powder – optional

METHOD
Preheat oven to 180c and line a baking tray with baking paper

Place chia seeds in bowl and add 7 tbsp of water – leave to thicken In a bowl mix cacao, GF flour, ground almonds, lion’s mane powder, coconut sugar and bicarb, baking powder until no lumps

Add in the olive on, almond milk and chia mix and mix very well

Mix in the dark chocolate chips Pour into the prepared tin and bake for 15 minutes, take out and sprinkle on walnuts then cook again for another 30 minutes until fudgy but a knife comes out clean – let cool for 15 minutes before cutting up and enjoying!
